
Spicy Garlic Crab
Whole crabs wok-tossed in a fiery garlic sauce with ginger, chilies, and scallions. A messy, hands-on feast inspired by Asian seafood houses.
Instructions

Heat oil in a large wok over high heat until smoking. Add crab pieces and stir-fry 4-5 minutes until shells are bright red. Remove and set aside.

Reduce heat to medium. Add garlic, ginger, and chilies. Stir-fry until fragrant, about 1 minute.

Add shaoxing wine to deglaze, then soy sauce, oyster sauce, sugar, and chicken stock.

Return crab to the wok. Toss to coat with sauce. Cover and cook 3-4 minutes.

Uncover, add green onions and cornstarch slurry. Toss until sauce thickens and coats the crab.

Transfer to a platter and garnish with cilantro. Serve with steamed rice and finger bowls.

- Adjust the chilies to your heat preference.
